The Maitre d' is the job title associated to an elderly, seasoned man onboard the Rising Star.
While no specific name has ever been given, the Maitre d' is among the many to see the Fleet exit from their home star system after the Battle of Cimtar. He is among the first to comment that the event reminded him of a time "before the war". Whether he is referring to the Thousand Yahren War or their current predicament is debatable. He later skillfully aids Lieutenant Starbuck in keeping Athena and Cassiopeia separated during Starbuck's leave by securing two separate suites, as Starbuck attempts to court the two in tandem; he expertly leaves the corridor after the two women run into each other, both holding one of Starbuck's warrior pins (The Long Patrol).
The Maitre'd is seen on the Rising Star after Chameleon and Siress Blassie board from the shuttle Canaris (The Man with Nine Lives).
