The fashions of the survivors of the destruction of the Twelve Colonies display a wide variety, from austere robes to the most flamboyant of dresses.
Quorum of Twelve
The original Quorum, under President Adar featured a variety of different styles of garb by the members. The reformed Council's attire was more subdued.
Resort on Carillon
The patrons of the chancery on Carillon likely represent what some of the more wealthy colonists might wear. After all, what happens at Carillon stays at Carillon (TOS: "Saga of a Star World").
Freighter Gemini
