The non-canon book (I forget the name) mentions that Athena is the youngest, and the family tree suggests this, but dialogue, and the character page, suggests that Zac is the youngest of Adama's children. His inexperience in battle suggests he is the youngest, as Athena ia full-fledged pilot/bridge officer. The family tree suggests Athena is the youngest.
